I can't find any button or selection in my GMod's launch options that lets me put the game into a window. Would anyone happen to know what to type in the advanced launch options to make it do so?

It should be in video options in game. Somewhere in there should be a checkbox that says Windowed Mode.

For Launch options use -windowed or -sw to start in windowed mode.
